Question of the day, are these bitches Ice Cream Bars or just chilled candy bars? I don’t know. I’m gonna go with Ice Cream because my first thought was, “wow, these taste more like the ice cream bars than the candy”. That was not my intention. Heads up, these are not crazy sweet. Mark even went as far as saying that they’re bland which I think is crazy. I took a bite of one and couldn’t stop myself from eating a million more. Actually I was 1.5 bars in and got that feeling you get when you’re inhaling donuts. It’s like, “damn that’s good but rich as fuck” so I put the rest back in the freezer. This recipe makes about 18 bars. Next time I will make 1/3 of the recipe. Side note: my sister & my husband both thought these looked gross. What the fuck? I’m not seeing what they’re seeing.

1.75 cups cashews, 11 dates, jar of apricot jam (it’s a bit tart, maybe sub it with date paste), water, 6 TB coconut oil (refined is a milder flavor), 40-50 grams of chopped nuts, salt, bag of chocolate chips

  1. Soak cashews until they’re soft (overnight?)
  2. Put cashews in a food processor and blend with pitted dates, 3 TB coconut oil, dash of salt & water. I used about 6 TB of water, adding each TB slowly. Goal: thick paste that is smooth (not watery). Add extra sweetener if you want to knock yourself out.
  3. Spread paste onto parchment paper then freeze
  4. I cut the paste into bars before they were super frozen so it was a little messy. I separated each bar with spaciousness and put 1 ts apricot jam on top of each one. Jam is slightly tart so maybe opt for DIY date paste.
  5. Chop nuts and place them on top of jam. If nuts are unsalted add a dash of salt to make it AMAZING. Freeze overnight.
  6. Melt a bag of chocolate chips with 2-3 TB coconut oil. You want the chocolate to be thinned out so that it will coat (not glob or be chunky) on the bar. Start with less coconut oil and add slowly. Freeze & ENJOY
