This may seem lazy to someone who likes to dirty millions of dishes & slave away long hours in the kitchen while using a ton of expensive ingredients. This is my dream meal. This has the absolute minimal amount of clean up, is cheap as fuck and technically uses all whole food ingredients. So we can give ourselves a goddamn pat on the back for being healthy little minimalists. Plus it’s another way to eat beans. I feel like such a baby because the whole planet lives on rice & beans but somehow I feel like Bean & Rice are boring unless I find some Halloween costume to dress it up in before I eat it. This is a great recipe and could be dazzled up with fancy oil, some sort of vinaigrette, olives or avocados.

2 medium sweet potatoes, 1 can black beans, 1 can corn, 1 lime, 1-2 TB chopped cilantro, onion powder, salt & tahini

  1. Place 2 sweet potatoes on a small piece of foil in the oven with a cookie sheet. 400 degrees for about an hour.
  2. Rinse the can of beans and corn and pour in a bowl. Mix with lime and salt. You could add oil, dressing, chopped olives or avocado. I just used lime, salt, dash of onion powder and cilantro.
  3. Cut a baked sweet potato in half and fill with corn & bean salsa. Drizzle a teaspoon of tahini over the top. ENJOY
