In attempt to keep this lower calorie I omitted pine nuts. Pine nuts are magical so I guess you could say that I made a big girl choice. Definitely add pine nuts if you don’t give a fuck. And it’s fair to admit that I went a little light handed on the basil. Below I’m recommending more basil than what you see in the video. All in all this was GREAT! Baking really brought out the flavors so much in the pesto.
1/2 cup packed basil, 1 can white beans, 1 tomato, pizza dough or crust, water, salt, oil, 1/2 citrus (lemon or lime), sprinkle of yeast flakes/onion powder/garlic powder and a tiny amount of cauliflower (.25-.5 cup pine nuts optional)
- Process in the food processor a drained can of beans with 1/2 cup basil, 1 TB oil & squeeze of lemon or lime. Blend it while slowly adding just enough water to blend everything smoothly. Add a dash of yeast flakes, onion powder, garlic powder and salt.
- Prepare your crust. Spread pesto along the crust & lay out sliced tomatoes.
- Chop the outer parts of cauliflower and mix with salt & oil. Sprinkle cauliflower over the top and bake. ENJOY!
