5 Vegan Whole Food Snacks - Healthy, Simple, College, Kid Snacks - Rich Bitch Cooking Blog

Dude, snacks!!!!!!!!!! I love junk food so making a bunch of whole food snacks were surprisingly epic. These are the perfect snacks for hippie college students or little kids.

As a lover of crappy junk food I think I’ve figured out the dazzling properties to whole food snacks vs packaged junk food. Junk food tends to been super salty or sugary sweet with some sort of refried carb & tons of oil. Those flavors are amazing together but the depths of flavor complexity just isn’t there. Then with whole food snacks there are aromas, textures and flavors that kind of stack on each other. Plus water content.

Whole food & junk food both hold an equal place in my heart. Some times all you need is an over the top burst of straight salt or sugar striped down to it’s concentration. Other times you need to savor the subtlest. Here we explore the latter.

Vegan Avocado + Nori Snacks
Dude, one bite in and I was like “OMMMMMMMMMMMMMYGDDDDDD”. If you’ve seen any of our old youtube recipe videos you will know how some of the most simplest foods completely explode my brain. This is one. I can not say enough good things about this. I should have sprinkled a dash of lime juice with salt over the top. Next time!

1 avocado, 1 large sheet of nori, water

  1. Cut avocado in half then cut each half into slice. Scoop out slices with a spoon.
  2. Count avocado slices then cut nori into each amounts.
  3. Dip 1 nori sheet in a bowl of water and wrap it around an avocado slice. You can either dip each end or the whole nori sheet. ENJOY

Does this sounds like some lame snack from the 80s? It did to me. But was surprisingly good. I LOVE celery. I could eat a whole head of celery. The lighter the color the milder the taste. The darker the green the more bitter it is. I think almond slices add a lot to the snack. If you haven’t had this combo since you were a kid it’s time you make this again.

celery stalks, almond butter, dried fruit, sliced almonds

  1. Cut celery stalks into 3
  2. Cover with a light amount of nut butter
  3. Place dried fruit on top and sprinkle with nuts. ENJOY

This was the first time I’ve eaten a bowl of bananas loaded up like this. I’ve made this 3 more times in the last week since I first made this. The coconut, almond slices and cacao nibs are the champion trifecta. This flavor combo must go on every from this point forth. Expect to see it in my future posts.

1 bananas, 1 spoon almond butter, sprinkle of cacao nibs, coconut flakes, almond butter

  1. Slice banana
  2. Drizzle almond butter on top
  3. Sprinkle on toppings. ENJOY

Vegan Avocado Grilled Sweet Potato Toast Snacks
Avocado makes everything amazing! I did garnish this with sriracha but you could drizzle with oil, tahini or a dash of onion powder. Oh pickles! That would be good too!

I grilled the sweet potato on my thrift store george foreman grill. It’s the easiest and quickest way to cook veggies!

1 slice of sweet potato, 1/2 avocado, spray oil, garnish with sriracha + hemp seeds

  1. Cook slice of sweet potato. I grilled mine with a spray of oil on The Foreman for 10 -15 minutes.
  2. Slice avocado and fan out on cooked sweet potato. Garnish. ENJOY

Vegan Tahini Oven Baked Fries Snacks
Fries made the list. I added a dash of lime juice over top. I don’t have a perfect fry recipe since I always cut the potatoes to different sizes and vary to the amount of oil I use.

1 or 2 huge potatoes, 1-2 TB oil (more or less is fine), 2 TB tahini, 1 TB agave, 1 lime, salt, salt, garlic, onion, dill

  1. Slice potatoes, mix with oil then bake. I did 400 degrees for about 50 minutes or until golden. I did flip once towards the end, optional. Sprinkle with lime juice once cooked.
  2. Mix tahini with agave, salt, some lime juice and a sprinkle of salt, garlic, onion, dill spices. Taste to see if it needs more salt or citrus juice. Maybe add the smallest dash of water if tahini is too thick. ENJOY

  1. Fries, avo slices wrapped in nori and sweet potatoes with more avocado have got to be the most delish things around. I have been madly planting out avocados all over the place in order that one day I will be able to harvest ALL of the avocado’s here in farthest flung Tasmania. It’s not their natural ‘happy place’ for growing but bollocks to that. When a girl needs an avocado, she NEEDS an avocado and they are pretty expensive here and we Taswegians are held to ransom due to our bit of water between us and the mainland. One day I will eat avocado’s all day. It’s my dream. We all need a dream…

    • I’ve lived that dream of eating avocado all day. It’s a worthy dream. Granted it’s been a few years. I should revisit that!

      Do you have a bunch of land or are you guerrilla gardening them?

      • We have 4 acres of land and Steve and I are horticulturalists so we know that you can grow avocado’s quite close to each other so I am going to make a few rows of avocado ‘hedge’ in the big area that we keep covered completely (in netting) to prevent the possums and wallabies from scoffing everything. The things we have to do to grow anything around here!

      • I a picky about where and how I have bananas, but I believe you. That one needs to grow on me.

        I also checked out the cakeordeathradio site. It’s a good thing you’re doing there. Please keep adding to it. There are many stories that need to get out there.

        Thot Criminal unfortunately tells of a situation I have seen become all to common in extended circles and secondhand from my immediate circles.

        • dude Thot Criminal’s situation is crazy. I haven’t seen or heard from him in a long time. I hope he’d doing good and everyone you know in similar situations. I hope they’re doing good too. Thanks for the encouragement! <3

          • There’s certainly more stories that can emerge surrounding that. I’m going to explore more of your stories on cakeordeath. Meanwhile, I will keep an eye out for him. Ronnie Davis is still in jail last time I checked. He’s one similar to Karl Lentz (whom I do NOT endorse) who was helping people recover their stolen little ones from CPS. I urge you to investigate Ronnie and look up Glenn of the sovereignliving YouTube channel. You’ve also probably heard of Mark Passio. Listening to these people among others have taught me so very much, I mean practical things. The same kinds of people that Thot Criminal was talking about and more.

            Of course, I don’t think it would surprise you in any way what these people would have to say. You understand and have a profound respect for what anarchy means, but sometimes it feels like we’re outnumbered.

            • I hear ya. Yeah, I don’t feel like I’m outnumbered but I know what you mean.

              I don’t look into any of that kind of stuff because it just eats me alive. I lived in that space for years and had no idea why I cried everyday and wanted to die every night. It took me forever to let go of the fight. I feel like a new person, it was long over due.

              I got an email 2 nights ago from someone up in Portland telling me he was gonna kill himself. He’s really socially and politically minded but it was eating him alive. I tried to tell him to refocus but he was in a super dark place. Fortunately the next morning he was still alive.

              I’m like him, if I get sucked it that world it brings me down.

              • I’m happy your friend is persevering. I’ll be sending him positive energy.

                It puts a lot of us in a dark night, probably ALL of us at some point. We’re human and if we feel deeply then we’ll feel the sickness of this world. I’m just tired of it to the point where I’m doing what I can to bring some healing to myself and hopefully others will follow.

                What you’re doing is part of the resistance. Keep up the good work.

                  I’m no longer sickened by the world. I’m seeing the humor in it. Obviously I’m not having barrels of laughs all day long but I’m glad with where my mind is at.
