Don’t we already cook enough? Do not live in the kitchen 24/7. Make some simple breakfast that comes together quickly so that you can move on with your day. Plus a cold refreshing breakfast is the best! Fresh fruit or smoothie bowl, dude sign me up.

These 6 recommendations are not mind blowing. I couldn’t find any earth shattering no-cook breakfast suggestions. Overnight oats and smoothies we main breakfast ideas that popped up when I was digging around online. And to be fair I didn’t made either of those in this post but I do enjoy both of those options a lot!

Here are 6 no-rocket-science-recipes to a simple breakfast that your average hippie would deem healthy. I didn’t create any of these recipes but was inspired by an amalgam of everyone on pinterest. I always like to link to the blogs that inspire me but that really doesn’t apply to this post.

Vegan Granola Parfait
#1 tip. Go to the bulk section for granola. Most of the granola has honey but I did find a honey free raspberry granola for $4.99 a lb. I swear granola cost twice as much in the bag and half as much in the bulk section. Plus you can pick out different kinds and have variety if you go bulk. Feel free to add fresh fruit. I just stuck with the dried fruit that the granola come with. Soooo good!

2 small containers of vegan yogurt (I used Foragers brand, it’s cashew based), 2 handfuls of granola, fresh fruit optional

  1. Pour 1 container of yogurt into your bowl or glass
  2. Top with granola
  3. Add a second container of yogurt
  4. Top with additional granola. ENJOY

I came across this recipe a few times and though it looked a bit youthful. But I figured, why the hell not. Dude, I loved these!!! I can not get over the magic of banana with nut butter <3

Texture is a real thing. Eating bananas on a pop stick is a different experience tthan sliced bananas topped with the same ingredients.

1 banana, handful of granola, 2 TB nut butter (I used almond), additional toppings (cacao nibs, coconut flakes, dried raspberries), 2 Popsicle sticks

  1. Peel banana and slice in half. Add popsicle sticks to each one.
  2. Spread nut butter over the banana and roll in granola. Garnish with additional toppings. ENJOY

This is called toast but I don’t own a toaster šŸ™ When we move from our shitty apartment into somewhere with glamours amounts of counter space then I will. Since the theme is “no cook” I figured I wouldn’t toast my bread in the oven. So this is Avocado Un-Toast really.

1 piece of bread, 1/2 small avocado, garnish (salt, lime juice, hemp seeds, oil, garlic salt, etc)

  1. Slice avocado into small pieces or mash with a fork
  2. Place on bread and garnish as you’d like. ENJOY

Also another fake toast situation. Dude, a few weeks back I made a 5 Vegan Whole Food Snacks post. That post completely changed my life. In addition for finding out how insane avocado tastes wrapped in nori (so good!) I found out that a bowl of sliced bananas drizzled with almond butter and topped with cacao nibs and coconut flakes is my favorite food ever. I’m being dramatic but I am 100% telling you the facts. I think that flavor, texture combo is mind exploding good. With that in mind I made a toast version. And I highly recommend it. I wish I drizzled agave over it so I’ll recommend that below.

1 bread slice, part of a banana, 1/2 TB almond butter, toppings (hemp seeds, cacao nibs, coconut flakes, cinnamon, thin slices of apple or strawberry, slivers of almond, chia seeds), drizzle of agave (optional)

  1. Slice bananas and place on top of toast
  2. Drizzle almond butter to top and garnish with toppings
  3. Drizzle agave over the top. ENJOY

This could easily have some vegan yogurt involved. I know fruit is amazing but boring as far as a recipe blog goes but who gives a shit? I like reminders for thing that fit the bill even if it’s obvious. And beautiful. Ah, honey dew is so great. I might buy one a year so this was real reminder that I shouldn’t pass up melons. Honey dew is like honey and flowers rolled into a juicy fruit. I threw berries inside but you could totally just slice up some bananas and top with my trifecta of perfection mentioned a thousand times in this post already. (trifecta: almond butter, cacao nibs + coconut flakes)

Melon, berries or fruit of choice

  1. Cut melon in half and remove seeds
  2. Scoop out a bunch of melon to make a larger space for berries to sit
  3. Add fruit of choice. ENJOY

Vegan Blue Smoothie Bowl
Inspired by the fruit bowl I was like, I should totally but banana ice cream in the middle of a melon. I made one blue smoothie bowl for me with a honey dew melon. Then I used a ceramic bowl for Mark so this made two servings or 1 large serving.

1 large fresh banana, 2 med frozen chopped bananas, 5 caps of blue algae (bought off ebay), fruit of choice, almond butter optional

  1. In a food processor I blended the fresh and frozen bananas til smooth with algae
  2. I poured half in a melon and the other half in a bowl
  3. I topped each with fruit and one with almond butter. Almond butter not pictured ENJOY

  1. Excellent score on the granola. We don’t get an option of bulk granola here, but making my own wouldn’t be hard (weekend job?) Seriously, you don’t toast your bread?! Check out this post about making toast without a toaster. I would use one of those cheap camping thingos that you put over your stove top to make it. I have a toasting fork that I occasionally use to toast bread in the wood stove but it always ends up raw inside and uber “toasted” on the outside (for toasted read BLACK!) cooking “toast” in a frying pan is so easy. http://www.thekitchn.com/you-dont-need-a-toaster-to-make-great-toast-tips-from-the-kitchn-208273 Do it ma’am, for the sake of your avocado lovin’ tastebuds.

    • If I eat toast I totally use the oven to toast the bread. But for the sake of “no cooking” I went untoasted. I really do want a toaster… when we get more counter space.
