This creamy cold DIY starbucks can fit pretty much everyone’s needs. Low carb, low fat and low calorie! And it’s thick, creamy, rich texture is thanks to the magic of my new favorite ingredient: xanthan gum. Xanthan gum offers the right mouth feel without the calories.
I do use chemical death sugar free sweeteners made from splenda. World market has every flavor of sugar full and sugar free imaginable. During the holidays they have a sugar free pumpkin spice.
Feel free to use whatever sweetener you like. I want to try some stevia drops. Anyone have any stevia recommendations?
For pictures purposed I did add vegan cocowhip cream and a drizzle of the Date Lady’s “caramel” date sauce. I split this recipe between the two of us but could have easily enjoyed the whole thing myself.
This vegan caramel frappuccino is 15 calories per serving (30 calories for the whole thing) without the topping. A single serving of toppings (cocowhip cream + date caramel syrup) was 55 calories. With all the luxuries, bells and whistles my glass come out to 70 calories!
If you leave the topping off the whole batch has about 1 gram of carbs. This you’re doing the ketogenic diet I would say this is perfect! The magic about xanthan gum is you only need a tiny pinch. It’s very keto friendly.
You can totally leave out the xanthan gum but know that it helps suspends the little ice particles throughout the whole drink. And it offers a fuller mouth feel. This drink shouldn’t feel like ice and water but a blended glorious drink. If you add too much gum then it will get super thick. 1/8th – 1/4th ts is more than enough!

Last thought! You can leave out the coffee and just add more almond milk! I prefer caffeine free and opt for decaf but I know not everyone likes the flavor of coffee. Dude, is it crazy that young kids drink these kinds of drinks from starbucks? Not only are kids not rich but coffee is an old man’s game. Just kidding.
1 cup unsweetened vanilla almond milk, 3/4th cup coffee (feel free to make it strong), sweetener of choice (I used sugar free salted caramel from World Market), 3/4th tray of ice, a little less than 1/4th ts xanthan gum (toppings are optional)
- Brew coffee
- Pull everything in the blender
- Taste to see if you want more ice or sweetener
- Pour in cup. Topping optional. ENJOY
