Dude! I loved all of these! So easy, minimal clean up and perfect because it’s just one serving. I have a more of these mug cake recipes coming soon. I bought frosting for these but was too lazy to wait for the cakes too cool before eating. These are great without frosting (and I love frosting).

I don’t know why I thought mug cakes were not worthy of the word “cake” but I was wrong. These were all sooooooo good!

Tips:

  • Egg replacers: if you use egg replacers like Ener-G then you’ll likely get a fluffier texture. Some people find without it the cakes are too gummy but I think they’re amazing!
  • Microwave time: Most people sell these as being 1 minute recipes but it could take more or less time depending on your microwave.  I did 90 seconds for a lot of these recipes.
  • Overcook, Under cook: If you under cook these (by even as little as 10 seconds) you could have a fudgy brownie texture. Super gooey. When fully cooked they will be drier like cake. When over cooked they will be much chewier. The main one below you don’t want to over cook is the cinnamon roll mug cake. Ultimately texture is just personal preference so play around.
  • Bowl vs Mug: These can all be mixed in the mug you’re cooking in. I mixed in a bowl then poured in a mug to keep the mug looking clean.
  • Water vs Almond milk: you can use water if you’re out of almond milk
  • Oil: You can use mashed banana or apple sauce if you want fat free mug cakes. I high recommend using vegan buttery coconut oil that I randomly found at the health food store. You might need to order it online, I think its worth it. But if you use coconut oil with cold almond milk it might solidify while mixing and require a couple seconds in the microwave to fully mix everything together.
  • Tooth pick: feel free to use a tooth pick to see if your cake is done. Poke it in the center and if it comes out clean then it’s done!

Vegan Pumpkin Spice Mug Cake (with Chocolate Chips)

1/4 cup flour, 1/2 ts pumpkin spice, 1/8 ts baking powder, 2 TB maple syrup, 2 TB almond milk, 1.5 TB pumpkin, 1 TB oil, handful chocolate chips

  1. Mix dry ingredients together then mix in wet ingredients
  2. Microwave for about 1 minute. ENJOY

1/4 cup flour, 1/4 cup sugar, 2 TB cocoa powder, 1/8 ts baking powder, 2 TB oil, 4 TB almond milk

  1. Making dry ingredients then add in wet. Mix til smooth.
  2. Add a large spoon of nut butter on top
  3. Microwave for 1 minute give or take. ENJOY

Vegan Cinnamon Roll Mug Cake
Oh my gggggggggggggg. The recipe that I followed (linked below) is so hilarious. She goes down the list of completely unrealistic expectations that people have expressed in their disappointment with this recipe (even thought it’s been mostly positive feedback). Definitively the best blog post I’ve read in a while. Practically crying while reading it. Dude, that author is a genius. 🙂

6 TB flour (plus additional for rolling), 3/4 ts baking powder, 3 TB almond milk, 2 TB brown sugar, 2 ts cinnamon, 2 TB powdered sugar, 1 ts almond milk

  1. Mix flour and baking powder together. Mix in almond milk. If dough is too sticky sprinkle extra flour on top.
  2. Roll dough on a floured surface. Roll into a long rectangle.
  3. Mix brown sugar and cinnamon together and coat the dough
  4. Roll sugared dough up and place in oiled cup
  5. Microwave for about 1 minute (read link for info about NOT overcooking)
  6. Make icing by mixing 2 TB powdered sugar with 1 ts almond. Pour on top. ENJOY

4 TB flour, 4 TB sugar, 1/8 ts baking powder, 2 crushed oreo cookies (extra for garnish),  3 TB almond milk, 1 TB oil

  1. Mix everything together then add crushed cookies
  2. Microwave for about 1 minute
  3. Once cooked add more crushed cookies on top. ENJOY

  1. I am currently Jonesing for cake. I don’t usually crave it but I have been limiting my carby goodness in order to lose some of my winter padding as our summer is apparently going to be a warmer than average one so while I would love to dive headfirst into every…single…one of these glorious concoctions, I might just have to become a feeder and stuff Steve full of them as they are too good to not make.

    • I’m hear ya! We spent the entire day running around looking for thrift store workout equipment. You & I are in the same boat.

      I glad each mug cake is one serving & not a whole cake 🙂 But i have a lot of dessert post coming up.

      How do food bloggers keep their ideal weight? I don’t even test recipes & there are times when I have to throw out some of what I’ve made so I dont eat it all.

      I’m under the impression most bloggers test & remake recipes several times. How do they do it? I can’t imagine they eat all of the food. Its crazy.

      • I am guessing food bloggers have a lot of friends and family that are happy to test their recipes. Perhaps, in years to come, there will be a new syndrome cited by scientists called “Obese neighbour, feeder food blogger” syndrome 😉

          I would give away food if it wasn’t a full time job trying to give stuff away. Coordinating schedules with people over free shit is the worst.

      5 years ago I made a couple videos for family & friends just explaining how we were saving money & what our tiny house looked like.

      I didn't think people would watch the video so I never checked to see whether there was comments. Sure enough both of those videos got 100,000+ views each.

      2 years ago when I decided I start making recipe videos I went to check the comment section for the first time on my old videos.

      Dude, the level of shit talking. People telling me how ugly I am, how I'm a man, how shitty my tattoos are, how my parents must be ashamed of me, how I'm so unemployable...and on and on.

      If I have to read comments like that I just wouldn't do YouTube. It's easier to turn off comments than to grow a thicker skin.

  4. It is official. I hate you!! LOL. The cinnamon roll was out of this world. I’m a sugar junkie and I put 4 Tbs of brown sugar in. Soooooo, after that trial run, I made SIX of them and put 5 in the freezer. I had to make sure the batch was good, so quality control required I eat another one.

    You and your husband make awesome music.
