These vegan cookie recipes are prefect for college students or anyone who does not need a whole dozen fresh baked cookies sitting around. This is an ideal amount of dessert for one. Each batch makes about 3 cookies.

I’m still working on my baking skills. So I did overcook mine, a little dry & hard. I thought these had a strong baking soda/baking powder taste but Mark said he didn’t notice it. It’s so weird, when my no-bake desserts come out flawless I have no idea if Mark will eat the left overs or not. It’s really hit or miss with him on perfect desserts. But these kinda crappy cookies he kept eating and say, “No, I think these are great” when ever I suggest an area of improvement.

But on a positive note these came out soooooooo much better than the last 2 batches of cookies I’ve made earlier in the year which were not blog related. I’m making progress. And that progress comes down to chilling the dough before baking to prevent these from spreading out too much. Chilling cookie dough is optional.

All I can say is channel your inner baker when making these. If something looks off in the recipe honor your instincts.

Vegan Chocolate Chip with Fudge Filling

2 TB vegan butter (28g), 1/4 cup sugar half white/half brown (58g), 2 TB almond milk (1 oz/23g), tiny splash vanilla extract, 1/2 cup flour (75g), 1/8th ts baking powder, 1/8th ts baking soda, handful chocolate chips, 3 ts trader joes chocolate swirl spread

  1. Cream vegan butter and sugar together. I used a fork.
  2.  Mix in almond milk + vanilla extract
  3. Mix flour, baking powder & soda together then mix into the wet ingredients.
  4. Mix in chocolate chips. Form 3 cookie dough balls. Place in fridge to chill (optional).
  5. Place 3 single teaspoon blobs of chocolate swirl onto parchment paper and place in the freezer for an hour or until hard.
  6. Once filling is frozen remove dough from fridge. Flatten dough into your hand and place filling in the center. Mush dough around the filling, roll dough in your hands. Leave no seams. Either place back in the fridge or freezer for another hour or just bake now.
  7. Bake at 350 for 12 minutes (more or less, use your inner wisdom here)

Vegan Funfetti Stuffed with Marshmallow

2 TB vegan butter (28g), 1/4 cup sugar white (58g), 2 TB almond milk (1 oz/23g), tiny splash vanilla extract, 1/2 cup flour (75g), 1/8th ts baking powder, 1/8th ts baking soda, handful of sprinkles, vegan marshmallows

  1. Cream vegan butter and sugar together. I used a fork.
  2.  Mix in almond milk + vanilla extract
  3. Mix flour, baking powder & soda together then mix into the wet ingredients.
  4. Mix in sprinkles. Form 3 cookie dough balls. Place in fridge to chill for an hour (optional).
  5. Flatten dough into your hand and place vegan marshmallows in the center. Mush dough around the filling, roll dough in your hands. Leave no seams. Either place back in the fridge or freezer for another hour or just bake now.
  6. Bake at 350 for 12 minutes (more or less, use your inner wisdom here)

Vegan Red Velvet Stuffed with Cream Cheese

2 TB vegan butter (28g), 1/4 cup sugar half white/half brown (58g), 2 TB almond milk or more (1 oz/23g), tiny splash vanilla extract, 1/2 cup flour (75g), 4 ts beet powder, 2 TB cocoa powder 1/8th ts baking powder, 1/8th ts baking soda, 2 TB vegan cream cheese, 2 ts powdered sugar, handful vegan white chocolate chips (buy these on amazon, ebay or vegan online stores)

  1. Cream vegan butter and sugar together. I used a fork.
  2.  Mix in almond milk + vanilla extract
  3. Mix flour, beet powder (or food coloring), cocoa, baking powder & soda together then mix into the wet ingredients. If too dry and tiny amounts of almond milk.
  4. Form 3 or 4 cookie dough balls. Place in fridge to chill (optional).
  5. Mix vegan cream cheese with powdered sugar. Place 3 or 4 single teaspoon blobs of cream cheese filling onto parchment paper and place in the freezer for an hour or until hard.
  6. Once filling is frozen remove dough from fridge. Flatten dough into your hand and place filling in the center. Mush dough around the filling, roll dough in your hands. Leave no seams. Either place back in the fridge or freezer for another hour or just bake now.
  7. Bake at 350 for 12 minutes (more or less, use your inner wisdom here)
  8. Once cookies are cool melt vegan white chocolate chips in microwave in 15 second bursts (mixing every 15 seconds). Drizzle on top of cookies.

1 TB vegan butter (14g), 1 TB nut butter (18g), 1/4 cup sugar half white/half brown (58g), 2 TB almond milk (1 oz/23g), tiny splash vanilla extract, 1/2 cup flour (75g), 1/8th ts baking powder, 1/8th ts baking soda, 3 ts jelly

  1. Cream vegan butter, nut butter and sugar together. I used a fork.
  2.  Mix in almond milk + vanilla extract
  3. Mix flour, baking powder & soda together then mix into the wet ingredients.
  4. Form 3 cookie dough balls. Place in fridge to chill (optional).
  5. Flatten dough into your hand and carefully place jelly in the center. Mush dough around the filling, roll dough in your hands. Leave no seams. Either place back in the fridge or freezer for another hour or just bake now.
  6. Bake at 350 for 12 minutes (more or less, use your inner wisdom here)

  4. Excellent share. Here in Australia we call our cookies biscuits and we bake them so that they are firm. We don’t like soft in the middle at all! I guess I just bake these a bit longer to make sure that they are crunchy and as we say here, “Bob’s your uncle”. Cheers for these. I can see my hips enjoying them 😉

      • No idea. Aussies are a weird bunch. Here’s some more old Aussie sayings “Stone the crows!” “Bloody oath!” “Stiffen the bandicoots!” Again, no idea what they mean but always said with an exclamation point. Some of my dad’s favourite sayings 😉

          • I just has a truly wonderful lazy Thursday that was just as good. I just finished my 3 day shoot for my short drama and had a day off in between being a director on Wednesday and an actor (in another students short drama) on Friday. It’s amazing how much you truly appreciate those delicious lazy days when you are up to your eyeballs in work! I just subscribed to your YouTube channel. Good work by the way.       • I made the chocolate chip (unstuffed because I am an idiot) and chocolate stuffed with peanut butter. The chocolate chip ones could have done with more time in the oven for sure, and I may have over vanillaed with the weird perfumey vanilla that somebody gave me as a gift for dogsitting while they were in Mexico. But the chocolate stuffed with peanut butter ones were perfection! But there’s really no such thing as a bad cookie, just maybe a less good one, like orgasms.
