These dairy free cheese recipes have the same base but very different flavors. Feel free to create your own interesting flavor using this basic recipe. The texture as firm as store bought vegan cheese. Maybe less water would make them firmer. They’re slightly jelly like but nothing too crazy.

Stretchy: These recipes are stretchy when made fresh and served hot from the pan. If you only want stretchy cheese and don’t need to firm the cheese for slicing or shredding then you can leave out the agar agar powder. Tapioca powder heated with liquid will make the perfect stretch.

Sliced & Shredded: The agar agar is needed to firm the mixture into a solid cheese that can easily slice and shred. And it doesn’t take long to firm up once placed in the fridge. Agar cooks into a gooey-ness when mixed with liquid but will becomes solid very quickly once taken off the heat.

Thoughts & Tips: 

  • I didn’t find the cheese to be super stretchy when reheated on pizza or in a grill cheese sandwich. I found dry heat (convention?) like the oven to not melt the cheese on my pizza. But when I picked up jalapenos from my pizza I found the vegan cheese underneath the peppers to be more gooey while the shredded cheese on top to look almost as it did when I placed it in the oven.
  • I think using conductive heat like my George Foreman grill to make a grilled cheese sandwich is a great way to melt the cheese but it didn’t become stretchy.
  • It’s worth noting that in order for agar agar to work properly you’ll need to dissolve it in cool or room temp water. If the pot or water is warm then it might clump up instead of dissolve. So first dissolve the powder then bring it to a boil while stirring. Don’t burn the mixture but make sure it boils and simmers for a little bit to fully insure that the granules become gelatinous. Tapioca powder also needs heat but is a faster processes when not paired with agar.
  • I didn’t use nutritional yeast because Mark has a weird reaction to the stuff. I would say it doesn’t make a difference. I never add it when making Vegan Cheese Dip from potatoes & carrots. It really isn’t noticeable so feel free to add it to any of these recipes but it isn’t necessary.
  • Some of the recipes below are full size and others are half recipes. Feel free to make any volume of this recipe you’d like. Just keep the ratios equal.
  • I’m pretty sure this freezes too.

Vegan Bacon Flavored Cheddar Cheese
When I took my first taste of this cheese straight from the fridge my mind was like, “bologna?!”. It was in part the cold feeling and interesting texture that my brain was playing jeopardy with when I took my first bite. I didn’t say a word about the flavor. I asked Mark to try it and he said, “kind of tastes like bologna” which he didn’t like. Then I melted it on a vegan cheeseburger with it. Melting on top it was great! He ate the whole thing.

Cold base: 3/4 cup plain unsweetened almond milk (6oz), 1/4 cup cashews (35g), 1.5 TB oil (22g), 1 ts salt, 1.5 TB tapioca powder (12g), 1 TB brown sugar, 1 TB maple syrup, 1/2 ts smoke, 1/4 ts chipotle powder (optional), 1 ts paprika (for color)

Gel mix: 2/3 cup water, 1.25 TB agar agar

  1. Blend everything together for the cold base together and set side
  2. In an unheated pan with unheated water dissolve the agar agar. Turn heat up and whisk the whole time. Get mixture to a boil then simmer with bubbles for a few minutes.
  3. Mix in the cold base. Since the cold will firm up agar agar feel free to mix it in slowly or in 2 parts. Continue stirring and cooking mixture for a few more minutes or until nice and stretchy.
  4. Pour in any mold (glass or plastic). Place in fridge til firm (a few short hours). ENJOY

Vegan Bean Burger Patty 1/2 can black beans, 2 TB bread crumbs (I used whole foods Italian flavored), 1 TB water

  1. Drain and rinse black beans & mash with fork
  2. Mix in breadcrumbs and water (add more water if too dry, more breadcrumbs if too wet)
  3. Form patty and pan fry with 1 TB oil
  4. Once patty is cooked on both side add a slice of homemade cheese. Add a couple drops of water to the skillet and cover with lid. This should melt the cheese in a few minutes. ENJOY

Vegan Pepper Cheese
Pepper jack? No, it could be but isn’t pepper jack spicy? This is bell pepper jack. Definitely my favorite! The dried bell peppers smell amazing straight from the container. They’re a power house of flavor. This cheese is mind blowing good. I added this cheese to homemade pizza (trader joes pizza dough is $1.19) and it was (I’m not joking) THE BEST homemade pizza I’ve ever had!

I found dried bell pepper in the bulk herb spot at the fancy gourmet store. I’m not going to assume that you will have this near you. Check your fancy stores but amazon and online spice shops will have this. I bet you could make this with fresh peppers. Or maybe even dry out your own peppers.

Cold base: 1.5 cup plain unsweetened almond milk (12oz), 1/2 cup cashews (72g), 3 TB oil (45g), 1.5 ts salt, 3 TB tapioca powder (24g), 1 TB vinegar (15g)

Gel mix: 1.3 cup water, 2.5 TB agar agar + 1/4 cup dried bell pepper (I didn’t soak mine  in hot water I wonder if I should have)

  1. Blend everything together for the cold base together and set side
  2. In an unheated pan with unheated water dissolve the agar agar. Turn heat up and whisk the whole time. Get mixture to a boil then simmer with bubbles for a few minutes. Add dried bell pepper. I didn’t rehydrate them and threw them in dry.
  3. Mix in the cold base. Since the cold will firm up agar agar feel free to mix it in slowly or in 2 parts. Continue stirring and cooking mixture for a few more minutes or until nice and stretchy.
  4. Pour in any mold (glass or plastic). Place in fridge til firm (a few short hours). ENJOY

Vegan Buffalo Wing Cheese
When this stuff was a dip and still stretchy in the pan I thought it was the best tasting cheese sauce ever. I thought the flavor mellowed out a bit once it firmed up in the fridge. Either way this makes a great flavor!

Vegan Mac + Cheese Recipe: I cooked 2.5 oz of pasta. In a separate pot I melted roughly 1/4 to 1/3 cup of cubed up vegan buffalo wing cheese with a small dash of plain almond milk. Once melted I mixed in the pasta. ENJOY

Vegan Jalapeno Mustard Cheddar Cheese
Dude this was supposed to be jalapeno cheese but then life happened. First off I didn’t have an fresh jalapenos. I had pickled jalapeno. And when you add salty, vinegary items with turmeric then it’s going to taste like mustard. And the jalapeno isn’t the flavor but just provides the heat. Sad face. But once grilled with some bread this was an awesome sandwich.

Feel free to skip the turmeric, vinegar and pickled jalapenos (use fresh instead) to make this a classic spicy cheddar without the tang of mustard.

Gel mix: 1.3 cup water, 2.5 TB agar agar + handful of diced pickled jalapeno

  1. Blend everything together for the cold base together and set side
  2. In an unheated pan with unheated water dissolve the agar agar. Turn heat up and whisk the whole time. Get mixture to a boil then simmer with bubbles for a few minutes.
  3. Mix in the cold base. Since the cold will firm up agar agar feel free to mix it in slowly or in 2 parts. Continue stirring and cooking mixture for a few more minutes or until nice and stretchy. Mix in jalapenos.
  4. Pour in any mold (glass or plastic). Place in fridge til firm (a few short hours). ENJOY

    • The “it’s not too late to look at those deleted emails” is a feeling I’ve recently felt. I went digging through my deleted folder looking for the free airfryer offer. I didn’t find 🙁 ha ha ha ha

      Edyn (from youtube) offered to email the company who gave her the free airfryer to get them to hook it up. I didn’t ask her follow through on that……. but if that opportunity comes a knocking I’ll be more open minded next time.

          • I have made several cheezes before. I bought Stephanie’s book on agar agar cheezes way back and love them so your cheezes are going to be a fun experiment. Vegan cheezes have come a LONG way baby 🙂

      I think it would have been totally fair for them to ask shit of me even though I’d prefer them not to. I’m such a selfish bastard in that regard. That’s part of the reason I didn’t accept anything in the past. My fear of having to read some company’ creepy script. I’ll get over it 🙂 I need to keep feeding my family.

  4. I have recently found out .. and you may already know this. But. Nutritional Yeast falkes have 2 different varieties.. some have added ingredients and that may be what He cant handle ??( Not sure but its worth a look into finding out more… and im wondering if the reg kind WITHOUT the added chemicalls might might be a better choice so he can enjoy 🤗 More variety in the Vegan Cheese World ..

  5. I bet people will buy that blender based on your awesome gratitude for it’s elevation of your life/cheese making. I would but I found a magic bullet in my sisters cast offs so I can’t get a new blender until it dies or I get a disease that can only be treated by having perfectly pureed and pulverized things. My cheese adventures with your recipe and my substandard blender begin tomorrow.

    • Believe it or not I used to live off a DOLLAR STORE BLENDER for years! $15 ha ha ha

      Then I used my dad’s oster beehive blender once and was sold. I bought my own. I think it was $40?

      I’ve been using that for years. I actually *just* paid $15 to replace the plastic ring and stuff. Seriously, just a month ago. I was not foreseeing the blender upgrade. (even though I’ve been wishing for a while)

      A fancy blender is totally optional. For a while I was wanting a magic bullet because you can blend and puree small amounts of things. And that dazzles me.

    • You can leave it out or use any thing acidic like lemon or lime juice. TB at most or half a lime. I hope you make something good!

See….you should have tried that free air fryer 😉 tee-hee (yes, I know, they are HUGE, actually about the size of an Instantpot, or a round crockpot), because I know you would have created some crazy delicious meals! I made a lentil loaf, sliced it into pieces, and air fried it vs oven vs george forman (Breville panini press) grill and my favorite by far was the air fried version! The oven was still tasting a bit like refried beans in the middle, the grill pressed it down too thin, the air fryed version was crispy on the outside, cooked great on the inside, and when all were cold and put on a sandwich with mustard, the air fry one tasted most like a burger texture…I want to try making meatballs out of it! Thanks for the recipes, these look FABULOUS!!!!! Definitely want to make them! Congrats on the blender, one of my most used items 🙂

    • My sister said when I wanted to get a deep fryer (I have a specific recipe for the blog in mind) that I could store it at her place. My kitchen doesn’t have much room left in it.

      Funny thing is I wanted an air fryer but it was outside of my comfort zone so I wrote it off as not having enough space. I want to cook potstickers and spring rolls in an air fryer soooo bad.

      I love that you explained your lentil loaf experience! What brand, size, model do you have?

      But now that I know I can store stuff at my sisters I might be more open minded about it.
