These recipes are based on aldi prices. I think there’s one thing in the video that’s actually not Aldi brand but it’s a rare fluke. I usually keep aldi brand almond milk in my fridge but happened to have fancy brand almond milk while filming. Aldi prices are lower than walmart, ethnic stores and the grocery clearance discount store that we also go to.

Obviously aldi is light years cheaper than health food stores.

There’s a million reason to be wallet conscious. First figure out your priorities and note if better spending habits would support your priorities. More money is powerful. But sometimes it’s simply just having more time. If you can afford to work less you can redirect your energy into your passion instead of a paycheck.

One article that always inspires me to want to make budge recipe posts is Killing Your $1,000 Grocery Bill by Mr Money Mustache.

The other day I read this older post Breakfast- The Hidden Destroyer by Frugalwoods. Here’s she talks about their 10 cent breakfasts. Dude I talked so much shit on that 10 cent breakfast. I got my sister and myself crying laughing from the jokes I was making but it totally renewed my spirit and got me inspired!!! I’m such a nerd for ambitious and meticulous budgeting.

But don’t get me wrong I’m not dogmatic about it. I think I just like this because it fits my personality and not so much because of some moral high ground. My nature is frugal but my husbands is not.

Vegan French Toast – 44 CENTS
I’ve made this style of vegan french toast once a LONG time ago on the blog. I bought cheap chemical death syrup as more of a statement piece. I’ve pretty much never buy cheap ass pancake syrup but you know what…. why the fuck not. I bought the “lite” version too because it was half the calories. Fuck it, I’ll go deep with the delicious chemical corn syrup soup.

2 slices bread (18 cents), 1 banana (12 cents), 2 TB almond milk (2 cents), 1 TB oil (2 cents), cinnamon (1 cent?), 3 TB pancake syrup (9 cents) = 44 cents total

  1. Mash banana and mix with almond milk & cinnamon
  2. Coat bread slices very well with banana mixture
  3. Cook in skillet with 1 TB oil
  4. Add syrup on top. ENJOY

Vegan Breakfast Feast – 48 CENTS
Vegan chickpea scrambled eggs, baked home fries and toast with jam. What more could you want?! Aldi’s 10 lb bags of potatoes usually average 33 cents a pound. Dude bring on the potatoes!

1/2 lb potatoes (16 cents), 1/2 TB oil (1 cent), salt & spices for potatoes (1 cent?), 3 TB chickpea flour (12 cents), salt & spices for “egg” (1 cent), 1 TB oil (2 cents), 1 slice bread (9 cents), 1 TB jam (6 cents) = 48 CENTS

  1. Cut potatoes into desired shape. Mix oil, salt and spices all together with potatoes. Bake at 400 degrees til golden (about 45 minutes).
  2. Mix chickpea & water with spices. Cook in skillet. I forgot to add oil to the pan so added a few drops of water while it cooked. Cook chickpea eggs til the batter is cooked and no longer tasting like raw flour. I wish I had cooked mine in vegan butter!
  3. Toast bread and add jam
  4. Plate everything up. ENJOY

2 Ingredient Vegan Granola + 54 CENTS (45 cents)
Yes it’s chemical death but that’s okay. It’s a fair trade. 99% of people who eat pancakes use the fake stuff so lets not get caught up in the details. Goal is cheap. Goal is to keep more of my hard earned money. A little rogue ingredients every now and then is fine. Eye on the prize tiger.

It says 54 cents and that’s for the whole serving of granola + milk. I actually ended up pouring 2/3rd of it into a bowl and saving the rest for the smoothie bowl. So it actually was more like 40 cents!

1.25 cups oatmeal (24 cents) 1/4 cup pancake syrup (12 cents) + 3/4 cup almond milk (16 cents), frozen raspberry garish (2 cents) = 54 cents total

  1. Mix the 2 ingredients together
  2. Layout on baking sheet. A thin layer is good.
  3. Bake at 375 for 15 minutes or until golden
  4. To break granola into clusters allow the oatmeal to completely cool before breaking it up.
  5. Serve with almond milk. ENJOY

Chocolate Smoothie Bowl – 49 CENTS
I’m pretty sure everyone on the face of the planet has had a smoothie bowl before. At least that’s what social media wants us all to think but I don’t think I’ve had an official smoothie bowl until 1 year ago. I’ve had a lot of banana ice cream in the last 15 years but a smoothie bowl is pretty much taking banana ice cream and elevating it. I can not say enough good things about this simple little breakfast.

2 chopped frozen bananas (25 cents), 2 servings cocoa powder (8 cents), 2 TB almond milk (2 cents), 1/3 of the granola listed above (12 cents), frozen raspberry garish (2 cents) = 49 cents

  1. Process banana and cocoa powder is food processor
  2. Once broken up add a tiny bit of almond milk then continue processing til smooth
  3. Pour in bowl and top with granola. ENJOY

Vegan Strawberry Bars 3.38 Total /42 CENTS EACH
These bars are so sweet and buttery it’s unreal. There’s almost too sweet! wink, wink – The bars are a bit messy to eat but that’s okay. The vegan butter is what’s holding these together so be sure to cut them up once fully chilled.

1 cup flour (135g/16 cents), 1 cup oats (104g/24 cents), 1/2 cup brown sugar (108g/8 cents), 1/4 ts baking soda (1 cent?), 1/2 cup vegan butter softened (2 sticks/$2), 1 cup jam (250g/89 cents) = 3.38 Total /42 cents each

  1. Mix all the dry ingredients together then mash softened vegan butter into the dry ingredients
  2. Place half of the mixture into a small lined tin
  3. Add jam to the mixture and cover the jam with the rest of the breading (watch video for details)
  4. Baked at 350 for 35 minutes
  5. Let cook completely then but into bars. Beware they are messy and addicting! ENJOY

  2. I am finally getting around to make a comment on your blog. I am really enjoying watching your recipes and reading your blogs about the recipes and now I wish I had time to get my ass up and make some of the stuff. It is very challenging in the RV with the tiny gas oven which I am not used to. I prefer my electric stove. I can’t wait until we get the solar going and I can use my electric cooktop again! Your videos make me so hungry LOL. Dude you are so awesome! Oh also, I thought the picture was of Mark. You mentioned in one of your videos that it was not Mark. 😃

  3. I love that you are honest about potatoes and their cooking times. I’m getting so sick of the old “cut up a raw potato into fries, then throw it in a 400 degree oven for 20 minutes..boom, crispy ass fries!” Those oatmeal bars are amazing, I didn’t have jam or jelly so I chopped up some green apples mixed with sugar and cinnamon and a few walnuts.

    • Thanks YOU! Exactly what you’re saying about potato cook time is my life. I can not tell you how many times I’ve cooked hassel-back potatoes and each time took TWICE as long as every recipe I looked at. I seriously do not know why the discrepancy exists 🙂

    I made a batch an my boyfriend really enjoyed them….so i went back an used my ripe ass bananas & just made a “crust” no jam. Perfect texture once cools. I used tge crust for a fruit pizza!!!!
