Vegan Loaded Mashed Potatoes Spring Rolls
I’ve made spring rolls a million times in my life (maybe 5 times?) and this was the only time I had an issue sealing the spring rolls closed. Usually a little dab of water and it’s like instant glue. But these spring rolls had a different texture (less doughy) so I held the end I wanted to seal in water to hydrate the wrapper in order to make it stick. This shouldn’t be an issue for you because I don’t think I’ve ever dealt with that before. Just a heads up in case you ever have to deal with this.

As always I buy vegan spring roll wrappers from the freezer section of any Asian store.

2 large potatoes (538g), 1/2 vegan sausage (or vegan bacon), 2 oz vegan shredded cheese, 3 TB vegan butter, black pepper, onion & garlic powder, salt, green onion, spring roll wrappers + oil for coating

  1. Peel and cube potatoes. I cooked mine by microwaving potato cubes for 8 minutes in a covered bowl (no water needed!). I had no idea cooking a potato could be so easy!
  2. Once potatoes are soft mash with fork and mix in diced vegan sausage, vegan cheese, vegan butter and vegan spices/green onion.
  3. Put 1-2 TB of filling in a spring roll wrapper and roll shut. Seal the ends by wetting the wrapper with water. Usually tracing the edge of the wrapper with a wet finger will get the job done.
  4. Lightly coat the outside of the spring rolls with oil. I used a pastry brush but I’m sure spray oil would work.
  5. Place in air fryer and work in batches to not over crowd it
  6. 400 degrees for 5 minutes. Flip then cook for an additional 2 minutes. ENJOY

Vegan Pizza Cheese Sticks
Dude these were sooooo cheesy!!! If you want to read about my spring roll wrapper drama I mentioned it in the recipe above. I don’t know if every vegan cheese would get so gooey but the follow your heart brick of cheese melted perfectly! I couldn’t find vegan pepperoni so I thinly sliced vegan seitan sauces for the filling.

1 vegan mozzarella brick (I used follow your heart), 1/2 vegan sausage sliced thinly (or vegan pepperoni),  spring roll wrappers + oil for coating

  1. I cut my chz brick into 8 pieces
  2. Lay your vegan pepperoni and vegan cheese on a spring roll
  3. Roll spring roll up then trace the edge of the spring roll with a wet finger to seal the roll
  4. Coat rolls with oil. Work in batches to not over crowd the air fryer.
  5. 400 degrees for 5 minutes. Flip then cook for an additional 2 minutes.

Vegan Pizza Pocket
The crescent rolls got really dark fast. You can keep an eye on them to not over cook them or use a lower temp. I thought these were so good. I was debating dipping them in vegan ranch (I bought my first bottle of follow your heart ranch) or in marina. I meant to save some vegan pepperoni (really seitan sausage) for this recipe. Oh well. Such a quick recipe! This is a feast in under 15 minutes.

1 container crescent rolls, couple spoons of pasta sauce, vegan shredded cheese, spray oil

  1. Divide the container of dough into two rectangles. With your finger try sealing all the cut lines.
  2. Lay your dough horizontal. On the right side put a couple spoons of sauce then a helping of vegan cheese. If you don’t overfill this then you’ll have an easy time sealing the pocket shut.
  3. Fold the dough to the left over the right and pinch completely around the pocket to seal it
  4. Spay a small pan and place pockets in the pan
  5. 400 degrees for 6 minutes. Flip then spray with oil and cook for another 5 minutes or until golden.

Vegan Pigs in a Blanket Sausage Rolls
Again, dough got dark fast but didn’t taste burned.  I love seitan and by adding crescent rolls you magically have a meal. Dip it!

  1. Cut vegan sausage in half
  2. Roll with dough triangles
  3. Spray a baking pan. Cook half the batch at a time.
  4. 400 degrees (or less?) for 5 minutes. Flip, spray with oil and cook for an additional 2 minutes.

Vegan Fried Pickles
Shut the front door! I don’t know why I thought this would be a chore to make but this wasn’t. I ate these soooo fast. And I’ve concluded that a flour paste is my new go to when breaded food. A flour paste is such a straight forward (and cheaper) alternative to vegan eggs. I’m not sure how we’ll it would do with deep frying but the flour paste is perfect for holding the breading on baked and air fried foods. I’m in love!

I’m ready to make another batch of these. I didn’t even share with Mark (but to be fair he wasn’t home when I made these)

15 pickle slices, 4 TB flour,  4 TB water (or more), 1/3 cup panko. 1/3 cup bread crumbs (I like whole foods brand italian flavor), spray oil

  1. Drain pickle slices on a paper towel. Pat dry both sides.
  2. Make your flour “egg” my mixing 4 TB of flour with 4 TB water. You may need a few more drops of water to thin the paste out. You don’t want it too thick or too thin.
  3. Mix panko and breadcrumbs
  4. Dip pickles in flour “egg” then coat in bread crumb mixture. It’s best to use one hand for the wet and one hand for the dry ingredients.
  5. Add breaded pickles to the air fryer. They will only get browned and golden if you spray them with oil. Work in batches to not over crowd the machine.
  6. 400 degrees for 8 minutes. Flip then spray the other side with oil and cook for an additional 3 minutes.

Vegan Blooming Onion
Mine was clumpy and had some dry flour bits but it was so good dipped with vegan ranch. Vegan ranch for president!!

If you have a more agreeable personality regarding battering onions then I definitely recommend trying to put in 20% more effort into coating the individual onion pieces. You can see I made clumps of the onion petals. The small dusting of plain flour on the underside meant I also could have done a better job with coating between the wet and dry. My half ass job came out so good but my ego does want to try to make this again the proper way.

1 large onion, 1 cup flour, 1 ts onion, 1 ts garlic, 1 ts salt, 1 ts paprika, 1 cup flour, 1 cup water, some pickle juice (about 1/4 cup)

  1. Cut onion as shown in the video. Essentially you’ll want to cut straight down along the outside all the way around. You don’t want to cut the center or the onion will completely fall apart. I did carefully cut the upper part of the inner core once all of my petals were cut but intact with the root.
  2. Spice your flour as you prefer. A cajan coating would be epic but I just added simple spices to my flour.
  3. Make your flour “egg” with 1 cup flour and 1 cup water. Thin the mixture down with a little pickle juice or water.
  4. Coat onion in flour. Turn upside down and shake the excess flour out.
  5. Place onion in flour “egg” and with a spoon coat the onion in “egg”. Now would be the time to get the “egg” between each petal. Flip upside down to drain any excess.
  6. Coat a total of 2 or 3 times. With flour as the last stage before dipping with oil. This will not get golden without oil so spray it well.
  7. Place on baking pan and set inside the fryer.
  8. 360 degrees for 20-30 minutes or until crispy. Check it around the 20 minute mark then keep an eye on it until golden. ENJOY

Vegan Air Fried Ravioli
Much like the fried pickles I could not stop eating these. Another debate on if I should dip these in marina or holy vegan ranch. I bought vegan wonton wrappers from the Asian store but it’s actually crazy easy to make ravioli dough from scratch (flour and water). I do have a hand rolled vegan ravioli recipe on the blog from back in the day. I used nut cheese instead of vegan cream cheese because I think throwing away money (sometimes) for better tasting ingredients is totally (rarely) worth it.

Explanation is long but it’s easy to make!

1 container cream cheese (I used treeline herb nut cheese), 1 oz shredded cheddar, wonton wrappers, 1 cup flour, 1 cup water (or more), 1 cup bread  crumbs, 1 ounce vegan Parmesan + spray oil *add onion and garlic powder if your cream cheese is plain flavored

  1. Mix vegan cream cheese with vegan shredded cheese. If your cream cheese is plain add onion and garlic powder or herbs of choice.
  2. Put a small ball of the vegan cheese mixture in the middle of wonton wrapper
  3. Dip your finger in water and run your finger all around the surrounding dough. Place another wonton wrapper on top and push the two wrappers together. I cut off the excess edges of dough with a crinkle vegetable cutter.
  4. To make the coating I diced up vegan parmesan cheese into smaller pieces and mixed with bread crumbs. I placed some of the breadcrumb mixture on a plate with a spoon.
  5. I made my flour “egg” mixture with 1 cup flour and 1 cup of water. Mix til smooth and add a little extra water to thin the “egg” out. You don’t want this too thick or too thin.
  6. Coat ravioli in the flour “egg” then set on top of bread crumb mixture that’s on the plate. Pour additional bread crumb mixture over the top. With your fingers press the dry mixture into the ravioli.
  7. Work in small batches to not over crowd the machine. You’ll need to spay the ravioli with oil in order to brown the outside.
  8. 390 degrees for 7 minutes. Flip then spray with oil and cook for an additional 3 minutes. ENJOY

  3. Finally an air fryer! 🙂 We like to make french fries, spiced baby potatoes, hashbrowns, and also sweet potato rounds. Also made a lentil loaf that tasted like mush, but sliced and air fried gave it the most fantastic textured, crunchy outside that I ate it everyday with mustard on bread (like a cold meat loaf sandwich)…no mush about it, even better once it was chilled. FYI no oil is needed in the air fryer, you don’t have to spray on the top of things, they will brown totally fine without the added oil/fat, BUT if you like adding oil then that’s fine also. I have seen people make toasted cheese sandwiches successfully. The idea of putting a trivet in so you have a 2nd level is genius! Amazon sells terrific, and inexpensive, parchment paper with holes so it makes an easy cleanup on the bottom of the pot + allows the air to flow through (you could also just punch holes in your own parchment, but for $7/100 why bother LOL!). Thanks for the ideas!

      i LOVE my air fryer and use it almost everyday. I don’t have a toaster and just realized I can toast bread perfectly straight from the freezer. I love it.
