Vegan Cheese and Crackers
The first time I sat my adult self down and made some Vegan Lunchables it was specifically inspired from watching an Edyn Jacks video. The vegan cheese with crackers and grapes was soooo good that to this day I feel in flavor debt to Edyn.
What you need: Crackers, Vegan Deli Slices, Vegan Cheese, Fruit of Choice!
I used to straight up live off kale salad. I’m talking I’d eat it almost everyday for a couple years. There was a ton of times I’ve made with with shredded cabbage. If you buy a bag of shredded cabbage from the store you can make this even faster than chopping and washing kale. I do not understand store bought bags of “chopped” kale. Those always have the woody stem pieces all through out the bag. The large bunch of kale I bought ended up making twice as much as what’s pictured here.
Kale Recipe: 1 large bunch kale (stem removed, washed and chopped), 1-2 whole avocado (more the better), salt to taste, 1/4 cup nutritional yeast (more or less), 2 lemons or limes
- Mix kale with juice from 2 lemons or limes and salt
- Add avocado to the kale and massage well
- Once kale is mixed with avocado and wilted from the massage mix in the yeast. Taste to see if you need more salt. Enjoy!
Vegan Turkey Deli Wrap
I have learned the secret on how to take any plain ass sandwich or wrap up a notch. Sliced banana peppers (or even pickled jalapenos). Maybe pickles might be a better fit for your taste buds but I find that banana peppers to give 110% in the flavor department. Feel free to put whatever you like in your wrap.
Wrap (tortilla, avocado, vegan deli slices, tomatoes, lettuce, vegan mayo, banana peppers) + fruit
I swear to you that I just remembered that eating carrots & celery sticks was a thing. Dude why does my brain forget such elementary shit? A huge bag of carrots is so cheap and will last in the fridge for at least a couple weeks. I love celery. Like I said I do forget to eat it but I love celery enough that I could eat a whole mountain of celery sticks plain. But today we have hummus! Feel free to buy real deal pita but I just cut up some tortillas.
What you need: Hummus, Carrots, Celery, Tomatoes, Fruit, Tortillas
Vegan Fresh Spring Rolls
In case the assembly aspect of this lunch seems like a lot of work I will tell you right now it isn’t. If you make a couple rolls it will take you 10 seconds to whip these up. Now if you’re trying to make a party tray of spring rolls for you and everyone you know then expect it to take up all your time.
Fresh Spring Rolls Recipe: 2 rice papers, 1 carrot shredded, 1/2 avocado slices, soft lettuce of choice), fresh herbs optional + peanut sauce & fruit
- Soak rice paper in warm water until it softens. This takes less than a minute.
- Lay avocado slices down, then carrots then lettuce. Wrap up!
