3 Cheap Vegan Meals Under 75 Cents

I was hoping these recipes would make my list of Vegan 50 Cent Meals (50 cent breakfast  & 50 cent lunch & dinner) but these went a little over. Three great budget meals for under $1! Wahhhhoooo! Nothing strokes my ego more than making a cheap ass meal 🙂

Crispy Black Bean Tacos – $1.31 Total / 66 cents each (two servings)
YES! Another solution to make freshly cooked beans more flavorful. To recap: mix freshly made beans with salsa + mexican spices OR try chipotle sauce mixed with enchilada sauce with beans. Never eat boring beans ago. Making enchiladas, burritos, tacos, tamales? Flavor them up!

200g dry black beans (4 servings, full bag has 22) 45 cents, 2.5 serving salsa (22 serving full container) 17 cents, mix of chipotle, chili powder, cumin (5 cents?), hot sauce (5 cents?), 8 taco shells (12 shells in full container) 59 cents = $1.31 Total / 66 cents each (two servings)

  1. Soak beans overnight. I did about 18 hours then drained them. Cook in fresh water until soft. This took about 1.5 hours.
  2. Drain cooked beans and mix with salsa + spices. I didn’t have much salsa left so I added some hot sauce to make up the difference.
  3. Add beans to taco shells. ENJOY

Crispy Baked Falafel – 74 cents Total
You can cook this in a skillet but I’m too lazy to stand over the stove. Brush them with oil, bake (flip half way through) and you’ll have one less pot to clean.

150g dry garbanzo beans 46 cents, 1 ts coriander, 1/2 ts cumin, sprinkle of onion & garlic powder (5 cents?),  dash of salt 1 cent, handful fresh parsley 15 cents, 4 TB flour (or any flour) 5 cents + 1 TB oil 2 cents = 74 cents Total

  1. Soak garbanzo beans for about 12 hours. I’ve heard you could do 8-16 hours but 12 hours allows for the ideal amount of water to be absorbed.
  2. Drain garbanzo beans and place in food processor with spices, salt, parsley. You don’t cook the beans.
  3. Grind beans til they’re roughly chopped then add flour. Pulse until the mixture is smaller bits but not a paste. If you can form the mixture into a ball and it holds shape then it’s good to go. Worse case more flour will hope a wet mixture or a little water with help a dry mixture.
  4. Scoop falafel into desired shapes. Coat falafel with oil to bake. (or cook in skillet)
  5. Bake at 400 for about 25 minutes or until golden. Flip halfway through.

Vegan Shepard’s Pot Pie – $2.22 Total // 55 cents each (4 servings)
Think crustless pot pie with a shepard mashed potato topping. This made 4 servings. I divided this into 4 meal prep containers. The next day the dish was super thick and not runny with gravy at all. I thought this was the greatest dish on the face of the planet. Aldi sells 10 lb bags of potatoes for like $3.39 or something. Potatoes last forever so I can’t think of a better thing to buy. The specific cheap bag of potatoes that I buy are always super dirty. I used to never peel potatoes until I started buying those bags.

1/2 bag frozen mixed veggies 54 cents,  1288g potatoes 94 cents, 2 cups water, 2 TB bouillon 47 cents, 1 TB italian spices 2 cents?, cayenne optional 1 cents?, 4 TB + 3 TB oil 14 cents, onion/garlic powder 4 cents?, 2 TB corn starch 6 cents = $2.22 Total // 55 cents each (4 servings)

  1. Peel and chop a ton of potatoes. Boil til soft (about 25 minutes) and drain.
  2. Make gravy by mixing water, bouillon, 3 TB oil, spices together in a large pot. Cooked potatoes will be added to this pot so make sure it’s big enough. I added the corn starch at this point while the water was still unheated. Mix well before bringing to the stove.
  3. Once water starts to boil the corn starch should thicken everything up. If too thick add more water. If too thin dissolve 1-2 TB of corn starch with 1-2 TB of water then add to pot.
  4. Mix frozen veggie into the gravy
  5. Add at least half of the potatoes or more into the gravy
  6. Mash left over potatoes. I added 4 TB oil, garlic and onion powder to my mashed potatoes. Since my gravy was pretty salty I didn’t salt my mashed potatoes.
  7. Pour gravy with veggies into a casserole dish. Add mashed potatoes on top. The more peaks and texture to your mashed potatoes the better the edges will brown.
  8. Bake at 400 for about 45 or until the top looks golden. ENJOY

    • Dude 100% agree. I’m trying to master the art. It’s silly how rarely I think to eat crispy tacos. Then I make them for the blog and am completely blown away. hahahah. So cheap and good.

    • I have the worst memory. I don’t remember but it’s about 2.5 lbs of potatoes if that helps. Maybe 6 large ones?
