Dude yesssss! I finally made a sugar free dessert video and they’re NO BAKE! Say what?!

Sadly I don’t have the macros for some of these recipes. Even thought I weighed everything to the gram (as shown in the video) I didn’t end up using all of the ingredients. When I dipped the ice cream bars in the chocolate shell coating I should have dipped them while on the scale to know exactly how much chocolate was on each bar. If I had to guess how much sugar free chocolate coated the each bar I’d say 30g. So maybe 9 – 12 grams net carbs per ice cream bar?

Similarly with the candy bites I ended up only using the a fraction of the filling. Again, I should have weighted the before and after of the filling.

With the vegan keto cookie dough I used 100% of the recipe so I know those are 4g of net carbs per scoop πŸ™‚

The sweetener I used was swerve confectioner. Confectioner is my ideal choice because I’m too lazy to cream the fat and “sugar” together in order to dissolve the sweeteners. If it’s powdery then it dissolves instantly.

Vegan Keto Edible Cookie Dough – 4g Net Carbs Each
I thought these were soooooooooo damn good. The texture was so smooth. Mark thought these were bland. After he said it I agreed but before he said it I just took these to be a simple hippie recipe. I can not recommend these enough!

There’s a couple things I could suggest if you want these more flavorful.
1. Add more of whatever sweetener you’re using (I didn’t make these crazy sweet)
2. Add flavored extracts like vanilla or maple!
3. If you know some type of low-carb brown sugar/molasses flavor add that
4. Maybe a pinch of salt

4 TB coconut cream (chilled, from a can), 2 TB sweetener or more (I used swerve confectioner), 8 TB almond flour (76g), 2 TB sugar free chocolate chips (30g, I used lilly’s brand)

  1. Chill canned coconut in the fridge overnight. Next day flip the can upside down, remove the top and drain the liquid.
  2. Scoop 4 TB of coconut cream into a bowl. Add as much sweetener to the coconut cream as you’d like. Microwave if coconut cream is too thick.
  3. Add enough almond flour to the coconut cream until it’s thick like cookie dough. Taste dough and add any additional flavors (mentioned above) or sweeteners.
  4. Mix in chocolate chips and place dough in the fridge
  5. Scoop dough and ENJOY

Vegan Peanut Butter Cup Ice Cream Bars
I love a dipped ice cream bar with a nice chocolate shell. I figured the keto community would appreciate my efforts if I did some of that here. I’m not a ice cream expert because I’m too scared to try. I hate the idea of waiting all day then shit comes out hard as a rock. And that’s why I kept this simple. To be fair if you eat these in one day they’re creamy and smooth but are hard as a rock the next day. If yours is rock solid just give it a few seconds to thaw out. All is well.

This made 1.8 bars. Second bar came out a little bit smaller.

4 or 5 TB coconut cream (chilled, from a can), 2 TB almond butter (32g) 4 TB alternative sweetener (or to taste) + 125g sugar free chocolate chips & 1 TB coconut oil

  1. Chill canned coconut in the fridge overnight. Next day flip the can upside down, remove the top and drain the liquid.
  2. Scoop 4 TB of coconut cream into a bowl. Add as much sweetener to the coconut cream as you’d like. Microwave if coconut cream is too thick.
  3. Microwave 2 TB (or more) almond butter til smooth. Takes maybe 10 seconds.
  4. Mix almond butter with coconut cream. Taste and see if there’s enough flavor and sweetness. Add more of anything now.
  5. Pour in ice cream molds. (I found mine of ebay after digging through a million listings) Freeze til solid (5 hours?).
  6. Melt chocolate with coconut oil. Do 15 second burst in the microwave and stir in between. The more coconut oil you add to the chocolate the smoother the dipping process will be.
  7. Place back in freezer til chocolate hardens. ENJOY

Vegan Keto Chocolate Candy Bites
I figured it would be nice to use two different types of filling. One is coconut butter and the other is almond butter. I did mix both fillings with coconut cream to make them easier to pour into the mold. These came out beautifully! I feel like I should become a collector of chocolate molds.

The recipe below accounts for my mold. You may need to melt more chocolate as you go. I only used a small amount of the filling.

52g sugar free chocolate chips + 1/2 TB coconut oil
70g sugar free chocolate chips + 1 TB coconut oil
2 TB coconut butter (not oil!), 1 TB sweetener, 1 TB coconut cream
2 TB almond butter, 1 TB sweetener, 1 TB coconut cream

  1. Melt 52g chocolate with oil then coat the bottom & sides of chocolate mold. Place in freezer.
  2. Melt coconut butter with coconut cream and mix in sweetener. Pour in sandwich bag.
  3. Melt almond butter with coconut cream and mix in sweetener. Pour in sandwich bag.
  4. Cut a small hole in each bag then fill chocolate mold with the filling. Try to leave room for more chocolate to cover. Place in freezer.
  5. Melt 70g chocolate with coconut oil. Add the chocolate to the molds to seal them shut. Place in freezer til solid. ENJOY
